Week 2 a big success!

Wow we had a great time last night for Wed nite cocktails!

Attendees included:

The Champagne tropical medley was very refreshing. It was well received considering we went through 3.5 bottles of champage and nearly 1 bottle of Xrated liquor.
I believe the recipe was 1 part Xrated Liquor and 3 parts Champagne....Amy or Michael correct me if I am wrong here.

The Tater tot casserole was very delicious and I think we all enjoyed this Minnesota tradition!

We need the following recipes from the following peeps:
Amy - Tater tot casserole
Kathy - Garden veggie rollup
Roman - Strawberry sangria
Jeff - Lemon bars

Here is the recipe for the Thai peanut dip:
8oz cream cheese
8oz sour cream
2 cups peanuts crushed
1/2 cup Thai sweet chilli
lime juice to taste

You can add more peanuts, Thai sweet chilli or lime juice based on your preference. I serve it with those Wheat Thin air crisp crackers.

Tator Tot Casserole!!
2 lbs lean ground beef
1 med onion diced
1 1lb bag frozen corn
1 can of your fav cream soup (we used mushroom but, any will work)
1 bag frozen tator tots
milk
salt
pepper
wee bit of butter

1. Preheat oven to 350
2. Grease a casserole dish with the butter
3. In a large skilled get the onions going until they are translucent
4. Add in your ground beef and some salt and pepper.
5. Once the beef is browned drain off some of the fat and stir in the cream soup and some milk (not a lot just a few tblsp)
6. Add in the frozen bag of corn and stir
7. Chuck mixture in buttered caserole dish and top with the tator tots
8. Cook for 30 mins
9. EAT!

Feel free to take creative liberties with the ingredients. The casserole possibilities are endless!!

Oooh - And here's the method to the madness on the Vodka front...

1. Take your fav kind of triple distilled vodka

2. Get yourself a sealable container big enough to hold the bottle of vodka and some infusing ingredients (a jar, a decanter, a pitcher, or one of those fancy decorative ones)

3. Decide what you want to infuse. For fruit take the fruit or fruit combo you want to go with and mash it up a little with a little bit of sugar and chuck it in your infusing container. You can also infuse vanilla beans, bacon, vegetables etc (cucumber vodka is actually pretty refreshing). Just keep in mind that the more solid the thing is your infusing the longer it will need to sit.

4. Dump in the vodka and let it sit for at least a week. If it's a softer fruit (like strawberries) a week is good but, for harder fruits you'll want at least two.

5. Leave container out and giggle it every other day or so.

6. Drink it!!

There's a boatload of websites out there for ideas and what not. If you google it you'll find more information that you want on infusing vodka...

Apparently I'm not overly worked focused today...

Last night we discussed how Spanky, everyone's favorite dog, will be joining us next week. In honor of Spanky we discussed going with a dog theme for our Cocktails on Wednesday part III.

I may have found our cocktail!!

Doggystle On The Beach
1/2 oz Malibu® coconut rum
3/4 oz Hpnotiq® liqueur
1/4 oz Bols® Blue Curacao liqueur
1 splash 7-Up® soda

Doesn't sound bad...right?

Also, here are some of the food options we discussed:

Anything hotdog related
Shortbread

Hey people! I had a lot of fun last night meeting you all. I'll definitely be coming back next week.

Ok, so here's the recipe for the Strawberry sangria:

Red wine
1 lb of Strawberries
1/3 - 1/2 cup of sugar
2/3 cup Triple Sec
1/3 cup Rum

You can use whatever wine you want. I usually get the cheap stuff in the big jugs, haha. Half of one of those should do. I usually use the Captain Morgan Spiced variety for the rum. But as with all of this, you can experiment.

I may take a pass on the puppychow, but Doggystyle on the Beach gets two thumbs up...waaaayyy up :-)
